We attended the International Dairy Deli Bakery Association (IDDBA) Show in New Orleans during the summer in 2025, and we found it very informative. It was an incredible opportunity to connect with clients and buyers, and attend several insightful industry-specific talks. Here are key takeaways on consumer behavior and trends that are shaping the Dairy, Deli, and Bakery segments:
🌱 Consumer Behavior
Emotion drives purchases, and logic follows to justify them. Food brings people together, and presentation matters—whether in-store or at home for family and friends. Consumers are drawn to products that provide a “pick me up” or evoke nostalgia, with a focus on affordability and indulgence. Price is the most important factor, followed by convenience, flavor, and environmental sustainability.
⏳ Seasonal Flavors
Seasonal flavors create a sense of urgency, prompting consumers to make purchases in a limited timeframe. This trend continues to drive interest and demand, especially with seasonal promotions.
🍴 Portion Control
Consumers are becoming more conscious of cost and environmental impact, with many opting to portion products to save for later. Pre-sliced portions provide flexibility for several eating occasions and help reduce waste.
📱 The Role of Social Media
Social media plays a key role in driving brand awareness and consumer engagement. Ensuring your products are "Instagram-worthy" is essential for capturing consumers' interest and boosting sales.
📉 Scaling and Competition
There’s still room for small businesses to compete, even in a highly competitive space dominated by large players. Scaling rapidly can be challenging—it requires capital, skilled people, and reliable suppliers. Family-owned businesses looking to grow with a partner often find success with private equity investors or by integrating with a larger company.
